We have a log workshop, 18`*20`, unheated and used three out of four seasons. The logs are in good shape and plastered and chinked on the outside. We will have an eight foot ceiling, insulated with a ventilated attic. The cedar logs are about one foot thick. After plastering on the inside, how much insulation would be adequate on the inside wall?

Wood (log) is the only insulating material that increases in R value as the temperature drops and the way you describe your workshop, you probably won't be doing a whole lot to improve that. If you want to add insulation you might want to use bats and whatever you want in R-value.
