I'd just glue sheet vinyl flooring to the whole thing. You can take it to the ceiling if you like because it comes in sheets of whatever size you want and you end up with only a seam at the top and another at the tub. I did some of these in the past and to the best of my knowledge, they're all still in use years later. You also have all but a limitless choice of colours and patterns.
