Last year we purchased a store that has a walk-in cooler. I have a humidity problem particularly in the summer, with water drips from nail-heads and that kind of nonsense. The most common cause of frost in a cooler has to do with too much ventilation; warm air coming in. Walk-in coolers, by design, have a lot of warm air infiltration because we have to keep doors open to get things out of there. One of the solutions I've seen has a heavy clear plastic vertical blind, ceiling to floor, inside the door so that you can still go through it but air movement is restricted quite drastically. The door, of course, still has to be kept closed as much as possible. Good luck!
