I am planning on building a 14 by 16 log cabin off the grid with log floor joists. Set on sona tube peers. How would I go about insulating the floor with no fear of mice getting between the insulation and floor boards or is there something else you would recommend. It is in a remote area.

Mice, and other critters, have been around longer than you and I and they're survivors so don't plan on building something and keeping them out of it unless its well sealed. I'd far rather see the walls of a crawl space insulated and vapour barriered than the floor of the cabin. If you're thinking of sona tube construction, you should have space for a two-foot deep crawl space and that means the floor too, could be well insulaated.
