Sadly, we do have to loose 5 inches from the bottom of the floor joists to the top of the new ceiling because of a very low pipe. We have have worked around it somewhat but we still have to go a bit lower than we would like to. We are using 2'x2' ceiling tiles so we would need to use two tiles for the slant at the bottom of the stairs. This would then require putting in a 2' cross T, but how do we angle the cross T? How do we fasten the cross T and the tiles to the floor joists where the stairway stops?

Forget the Ts altogether and get a ceiling panel that is 4' long so you can cut, bend, twist, etc. it to where you want it and then trim it in painted wood. These things are more flexible than they appear. I've even used white primed tentest in situations like this.
