I am renovating a basement in a house built in 1960. It has a 60amp panel. Although it has 4 slots available, it is very difficult to run wires to it which leads to looking at a sub-panel. I will be wiring for a range, dryer, washing machine, fridge and 3 kitchen outlets. What is the largest breaker I can use to feed the sub-panel and will it be able to handle the load? I'm assuming I simply cannot change the main breaker to 100amp without changing the complete panel and maybe even the service to the house.

You'll need a permit from your local power authority and anyone there will tell you that as soon as you try to modify any of it, you'll have to upgrade to at least 100 and probably to 200 Amp. service. There is just no way that the conductors for 60 Amp. service will handly all you want to add to it. Its a wonder you're not having problems as it is.
